Raw Vegan Corn Chips
I love chips and salsa, but the chips are the devil. Here is a simple recipe for raw corn chips that taste like 100% corn and won’t make you feel bad about eating the whole bowl.

Ingredients:
6 ears of corn
1/2 tsp cumin
1/2 tsp salt
1/4 cup flax meal (optional)
Directions:
Cut the corn to remove the kernels. Place them into a food processor and blend until most of the chunks are gone. Add the salt cumin and flax. Mix some more. Spread the mixture onto a teflex sheet or solid plastic sheet for your dehydrator and start it up. After about 20 minutes, sprinkle some salt across the top. Keep dehydrating until nice and crisp, about 24 hours.

Awesome recipe. I’ve spent a fortune on raw corn chips but I’ve never bothered to make them. I had no idea it was so simple! I’ll have to get myself a dehydrator now.

Cool! Raw foods are very intriguing to me. I think I’ve stayed away as long as I have to avoid buying extra kitchen equipment and cookbooks. But getting more into it is definitely on my “someday” list!

You suppose if you don’t have a dehydrator or if you’re dying of a corn chip jones, you could pop that sheet in the oven for a bit?

Great point, keep it below 100 degrees and to help out folks recommend using a fan to circulate air into the oven. Keeping it below 100 allows the enzymes to stay intact, otherwise you’re just cooking the nutrients away! But yes, an oven will do the trick.
